Nisaba is an Indian restaurant built on clarity, balance and straightforward cooking. We work with ingredients, familiar techniques and a simple, honest approach to flavour.

The space reflects today’s India, layered, evolving but still rooted.

In every dish, we try to let the ingredients speak first. Flavour follows intuition, guided by the seasons, the soil, and the stories that shape them. The act of cooking, for us, is not performance… but patience, a craft that honours both land and labour.

Drink

Nisaba’s beverage program is built on clarity and balance, much like the food.

The wine list is extensive, with selections from across regions and styles, chosen to pair well with the way we cook. Cocktails follow a back to basics approach, keeping the flavours simple, clean and focused.

Our non-alcoholic drinks are not an after thought. They are curated with the same care, using ingredients that are seasonal, fresh and expressive.

Interiors

The interiors of Nisaba focus on warmth, natural light and clean lines. The bar and lounge welcome guests at the entrance, followed by a dining room with a distinct look and feel. The space shifts from bright and open during the day to dramatic and intimate in the evening, with lighting that highlights the materials and details of the room. It includes a sandstone jaali pattern, views of surrounding greens and a curated set of Chef Manish’s collection of cookbooks.

The show stopper in the restaurant is a stainless steel and bronze sculpture by artist Dhananjay Singh titled “Life Cycle”. It reflects the rhythm of growth, where grain becomes form and form returns to grain. Rooted in nature yet reaching upward, the sculpture embodies Nisaba’s spirit of creation, renewal and interconnectedness.

A comfortable enclosed space for upto 14 guests, ideal for intimate gatherings and curated menus.
